Creamy Red Beans and Rice with Caramelized Onions

2 T butter

1 large white onion, sliced

3 c hot cooked rice (Cooked with Corbin’s Gourmet Seasoning & Marinade, any flavor) –try the Cajun!

1 (16 oz) can red kidney beans, drained

½ c sour cream

½ c grated Asiago cheese

¼ t freshly ground black pepper

Melt butter in large skillet over medium heat. Add onions; cook 8 minutes, or until onions begin to brown. Add rice, beans sour cream, cheese and black pepper. Cook and stir until well blended and cheese is melted.

Yield: 5 servings
