Oven-Fried Catfish
1 c plain breadcrumbs
½ c grated Parmesan cheese
2 T grated lemon peel
½ t thyme
½ t garlic powder
1 t paprika
1 pounds catfish fillets (marinade for approximately 15 minutes in Lemon Pepper)
½ c Corbin’s Gourmet Seasoning & Marinade, Lemon Pepper
Preheat oven to 450° . Combine breadcrumbs, cheese, lemon peel, thyme, garlic powder and paprika in a shallow pan or bowl. Dip the fillets into Corbin’s Gourmet Seasoning & Marinade, then the breadcrumb mixture, coating well. Place fillets in a lightly greased (or use nonstick cooking spray) baking pan. Bake 15 minutes, or until the fish flakes easily when tested with a fork.
Yield: 6-8 servings
